Mini Pita Pizzas

So I totally stole this from my brother-in-law.  He made them for us one evening and they are stellar.

Serves 4

4 8inch Whole Wheat Pitas

4 tbsp Pesto

8 tbsp Pizza Sauce

2 BBQed Chicken Breasts (diced)

1/2 Package Turkey Bacon

2 Cup Diced Spinach

1 Green Pepper (diced)

1/2 Medium Onion (diced)

2 Cups Mozzarella Cheese (Grated)

Preheat your oven to 350F.  Spoon a tbsp of pesto on each pita.  Spread evenly.  Spoon 2 tbsp pizza sauce on each pita.  Spread evenly.  Now top the pizza with a portion of the chicken, bacon, onion, peppers and spinach.  Finish it off with the cheese.  Bake the pizzas right on the rack for about 10 minutes.

Super simple and super tasty.  But wait!  You like pineapple on your pizza!?  Ok.  Put some on!  You can swap out whatever you want.  Just don’t over-top the pizzas or they won’t cook properly.  Also, because of the short cook time, pre-cook all meat and if you want softer veggies, pre-cook them a little as well.  Another neat tip is you can prep a lot of topping and have it a few times in a week.  Then all you have to do it top and cook.

Giant Baked Pizza Sub

I just realized it has been a long time since I made a food post on my blog. To be honest I haven’t really tried anything new lately. I made this yesterday as a pre-hockey game meal. In fact I made 4 of them! They were really tasty and I get to have some leftovers for lunch today!

Whole French Loaf
Deli Ham 200 grams
Pizza Pepperoni 100 grams
Grated Mozzarella Cheese 2 cups
Large Mushrooms 3-4
Green Pepper 1/2
Medium Onion 1/2
Pizza Sauce 1/2 Tin
Garlic Powder 1 tbsp
Oregano Dash
Parsley Dash
Butter/Margarine

Preheat your oven to 450. Cut the French loaf in half lengthwise so you have a top and a bottom piece. Lay them along side each other with the cut surface facing up. Spread a thin layer of butter along the top half. Sprinkle it with the garlic power, parsley and oregano. You are basically turning the top half into garlic bread. Spread half a tin of pizza sauce over the bottom half of bread.

Slice the mushrooms, onion and green pepper. Layer the bottom in the following order: Ham, pepperoni, onions, mushrooms, green pepper, and cheese. It is most important to have the cheese as the top layer so it melts down through everything and helps keep the sandwich together. Now place the top back on your sandwich. Wrap the whole thing in foil and bake at 450 for 30 minutes. Slice into 3 inch pieces and serve. Makes enough to feed 3-4 people.

I served this with Caesar salad but I think there are better options for sides out there. Please post other good side options.

Tamara’s special pizza

I have recently started making homemade pizza.  I have tried a few crusts but this one has been the best so far.

1pkg  Dried yeast (1 1/2 tsp)
1/2tsp  Sugar
1 1/2 Cup water (lukewarm)
3 1/2 Cups flour
1 1/2 tsp Salt
1 lrg  Egg (beaten)
Olive oil

Sprinkle yeast and sugar into warm water and mix.  Allow to sit for 10 minutes.  The mixture should bubble.

Combine flour and salt in a large bowl, make a well in the centre, pour in yeast mixture, pour in the egg and gradually work in the flour making a dough.

Turn out onto a lightly floured surface and knead throughly until smooth and elastic.  This should take at least 5 minutes of kneading.

Grease a large clean bowl with olive oil.  Place the lump of dough in the bowl and cover with a tea towel.  Allow the dough to rise and double in size (about 45 minute to an hour)

Punchdown the dough and roll out into a crust.

Now for the toppings.  This pizza is called Tamara’s special because it is my wife’s own creation and her favorite.

1 lrg  Green pepper
200g  Sliced deli ham
10lrg  White mushrooms (Sliced)
3/4cup  Feta cheese (crumbled)
3cups  Shredded mozzarella
1 tin  Pizza sauce

Pre-heat your oven to 450F.  After the dough has been rolled out, place it in a pizza pan.  If you don’t have a pizza pan you can use a cookie sheet.  Spread the pizza sauce all over the surface of the dough.

Lay the ham over the pizza sauce.  Place sliced mushrooms and green peppers over the ham.  Make sure that your toppings are evenly distributed.

Sprinkle the mozzarella evenly over the toppings.  Sprinkle the feta over the mozzrella.  Place pizza in the oven for 25 minutes.

When pizza is done remove from the oven and let stand for about 5 minutes.  The cheese is screaming hot when it comes out.

I hope you enjoy this deep pan dish.  This is also a fun one to make with kids.  They love punching the dough and after you have cut up the toppings they have fun placing them on the pizza.  Please post your comments if you have a chance to try this for yourself.  Also please leave other topping suggestions.
