Fermented Hot Sauce Batch #001

First attempt here. Using about a 3% brine with about equal part brown sugar. This pepper blend was from my sister and I am not 100% sure what all I had. It was some jalapeno, cayenne and some smaller bird’s eye chilis from my garden. I used about a 1/4 medium onion and I think one large (equivalent to 2 or 3) clove of garlic. I threw in a few peppercorns as well.

It went in on Aug 19th and I blended and fridged the batch on Aug 25th. Fermenting was all done under my stairs.

So far I am very happy with the results. I shall update if I notice a big change over the next few months.
